When it comes to traditional Salento foods, the queen of summer is undoubtedly the frisella, made from durum wheat or barley and a symbol of rustic simplicity: just moisten it with a little water, add fresh tomatoes, a basil leaf, and plenty of extra-virgin olive oil to create a refreshing and nutritious snack (or dinner), perfect after a morning at the beach.

Alongside the frisella, we find the pittule, soft fritters made from leavened dough (perhaps a bit less light than the frisella, but undeniably delicious): served plain or topped with seasonal vegetables, they’re a must-have at village festivals.

And for a quick snack under the beach umbrella or a rustic aperitif, there are Salento tarallini: small, crispy rings flavored with fennel, chili pepper, turnip greens, or onion.
